Of course, with Hanukkah coming up, Latkes — potato pancakes — are top of mind.
Fried food is traditionally eaten on Hanukkah in commemoration of the oil that miraculously burned for eight days when the Maccabees purified and rededicated the Holy Temple in Jerusalem. This recipe for classic potato latkes—also known as levivot in Hebrew—uses a food processor to simplify the prep.
There are two basic types of Latkes. The ones I make resemble the recipe at the Spruce Eats link above, except I always use a box grater. Also, I don’t peel the potatoes. And while russets are often called for, Yukon golds are delicious too. Latkes are traditionally served with sour cream, applesauce, or both.

I consider myself a pancake connoisseur, because of all the pancakes I've eaten around the world. I've been everywhere in Europe, I've eaten everywhere.

Let’s take a tasting trip to India, where you might find Spiced Chickpea Pancakes (Besan ka Cheela). I have made these, btw. I needed more water than in the recipe, but the flavor is great — nicely spicy using two serranos instead of the Thai chilis. Go low and slow with them — medium heat worked for me. A drizzle of plain yogurt or sour cream would be a nice garnish.

For Sunday breakfast, I make orange and ricotta pancakes, crepes and eggs. You know men, we usually go for breakfast because it's the easiest thing to cook and then we try to make it seem fancy.
Here’s one I’ve never had, but would love to try (if someone else makes, them, lol): Flaky Scallion Pancakes
It probably goes without saying that I enjoy the potato pancakes, delicious hams and so forth that maddeningly turn up at this time of year.
Sweet or savory Chilean Style Pancakes seem like Chile’s version of crêpes to me.
