This was in my local Kroger affiliate’s latest recipe flyer and I thought it sounded interesting. It isn’t for the nights you want a nice, thick juicy burger done to a perfect medium-rare — it’s for the times you’re all about the toppings and the meat is just a supporting player.
Smash Burger Tacos
- 1 pound ground beef, turkey or meat alternative
- ½ tablespoon Worcestershire sauce
- ½ teaspoon salt
- ¼ teaspoon each black pepper, garlic powder and onion powder
- 6 flour tortillas (mine were about 7.5 inch low-carb variety; I’m not sure how corn tortillas would work with this, but I suspect they would crisp up too much to fold without cracking)
- 6 slices cheese (I used havarti)
- tomato slices
- pickles
- burger sauce made of 1 tablespoon each pickle relish, mayo and ketchup plus ½ teaspoon mustard
- lots of napkins!
Mix the meat, Worcestershire, salt, pepper, garlic and onion powders; divide into 6 portions. Start heating the skillet over medium-high heat with a bit of neutral oil. Place one portion meat on a tortilla and press meat out to cover as much of the tortilla as possible.
Place, meat side down, into hot skillet. Cook for 3 minutes; flip over, place cheese on top and cook for another minute (or slightly longer). (If making more than a couple of tacos, place on a foil-lined baking sheet in a warm oven at this point.)
Top with tomato slices, pickles and burger sauce and fold in half. Feel free to mix it up with your favorite burger or taco toppings; I suspect you could even use sausage, scrambled eggs and cheese for a breakfast variety. They do get on the messy side, so have lots of napkins handy!
