Welcome to Street Prophets Sunday Coffee Hour. This is an open thread so grab something to drink and sit a spell and let us know what is new with you. I joined Street Prophets on May 5, 2008. I have been writing here for 17 years. In that time I have shared recipes, caregiving stories, cat or pootie stories, art, photography, books, science, outer space and good old Irish blather.
Currently I have one cookbook I need to finish the index on, if I can get the computer up and working, so I can try and get it published. I have enough recipes for a second and even a third cookbook. I have requests for specialized cookbooks. My niece wants a cookbook of recipes inspired by cooking around the world. She wants me to call it Around the World in 80 Dishes. A friend wants a cookbook of my Asian recipes. That one already has a name, I'll call it Asian Inspirations. I create new recipes daily. I will be able to share recipes with you for a long time. I am heavily into the Steampunk genre of writing. I have written about Steampunk a couple of times. I am about half way through my first Steampunk novel. A good friend has promised me a professional editor to look at the book when it is finished so hopefully I can get the book published. I am aiming for this summer for having the novel ready to go. I am calling it Reanimation Inc. Just a side note don't tick off a writer. A rude employee at Instacart who refused to help me with my food order has now had her name attached to one of my villains.
I am still emotionally processing my brother Reid's death. Nothing in life prepares you for holding a loved one's hand for eight hours while they die after you had to make the hardest decision of your life to turn off the life support. We had a decent living while he was alive but now I am living below poverty level and struggling to put food on the table. I am still fighting to get SNAP reinstated. I really miss Reid.
Pixie continues to be my constant companion but she is 20 years old or 96 in human years. She runs the house as all good cats do. Currently she is complaining about storms coming in. She doesn't understand why the stupid weather can't obey her Mommy when I tell it not to storm. Storms scare her.
I have a new painting idea. I just need to get over this flu so I can get things straightened up enough to reach the desk and have a place to sit down and paint. Art has been my solace for my whole life. My eternal gratitude goes to my second grade teacher Mrs. Bluestein who wrote on my report card,"Take a look at her art!" I do graphic art, expressionist paintings in acrylics and pen and ink etchings. I also do photography. You can find my work for sale at My Fine Arts America account
I am constantly coming up with new recipes. I love to cook. In fact here is one of my newest recipes for you.
Jalapeño Coleslaw
1 large jalapeño pepper - seeded and diced
1 head cabbage - shredded
1 large carrot - shredded
1 small red bell pepper - seeded and diced
1 small red onion - minced
Dressing:
1/2 cup mayonnaise
2 tablespoons buttermilk
1 tablespoon apple cider vinegar
1 tablespoon granulated sugar
1 teaspoon Dijon mustard
1 teaspoon celery seeds
Mix the jalapeño, cabbage, carrots, bell pepper and onions together in a medium bowl.
in a small bowl mix the mayonnaise, buttermilk, vinegar, sugar, Dijon and celery seeds together.
Add the dressing to the cabbage.
Refrigerate for at least 1 hour.
Makes 6 servings
