I credit my favorite relative in the whole world my late Aunt Hazel for turning me on to cooking. She was a cook in the Army during WWII. When I was eight she gave me my first cookbook a "Betty Crockers Boys and Girls Cookbook". I still have it.
Mom insisted I take Home Ec in school even though my Dad taught me how to sew and I was already cooking at 13.
As I got older I realized I had a real knack for creating recipes. I even had a Bed and Breakfast in Cornwall using my recipes. I got a panicked call one evening from a friend for my beef stew recipe. I have over 2,000 followers on my Facebook "Food Holidays That May Get Overlooked" page.
I get recipes in a couple of ways. One is the what would happen if I put this, this, and this together. The other way is I hear of a recipe and research how others do it and then come up with my own version. The following two recipes literally came to me in dreams. Yes I even dream of food.
Islands in the Dream
3 large egg whites
1/4 teaspoon cream of tartar
1 2/3 cups granulated sugar - divided
1 teaspoon pure vanilla extract
1 pint strawberries - hulled and sliced
2 cups strawberry syrup
1 dash salt
Let the egg whites come up to room temperature. Heat oven to 200°F. Line two baking sheets with parchment paper. Put the oven racks at upper and lower middle positions.
In a large bowl or stand mixer beat the egg whites until they are wet and frothy.
Add the cream of tartar and salt and beat on low for 30 seconds.
In a steady stream add 1/3 cup of sugar and mix well.
Increase the speed to medium and add the vanilla extract and beat until incorporated. Continue adding 1/3 cup of sugar at a time and mix well.
Increase the speed to high and beat until thick and glossy and mixture holds stiff peaks. Don't overbeat.
Drop by tablespoons full onto the baking sheets.
Bake for two hours or until the cookies are dry. Cool on a rack.
Soak the strawberries in a bowl with one cup of sugar.
To serve put two cookies in a bowl. Top with the strawberries and strawberry syrup.
Makes 20 servings
In Your Dreams Asian Soup
64 ounces Swanson's Thai Ginger broth
5 ounces chow mein noodles
1/4 cup low sodium teriyaki sauce
1 1/2 pounds pork tenderloin - cut into 1 inch cubes
4 ounces variety of mushroom caps - sliced
4 large green onions - sliced
1 tablespoon cornstarch
1 tablespoon fresh ginger root - minced
1 clove garlic - minced
1 large red roasted bell pepper - diced
1/2 teaspoon seasoned salt
1/4 teaspoon seasoned pepper
2 tablespoons vegetable oil
Make the noodles according to the package instructions and drain.
Mix the teriyaki sauce and cornstarch together in a medium bowl. Add the pork and mix well. Marinate for 15 minutes.
Add the oil to a large wok or skillet and heat to medium high.
Add the pork in batches and brown on all sides. Remove from the pan.
Add the garlic, ginger, mushrooms and remaining teriyaki sauce and cook for 2 minutes.
Return the pork to the pan and add the red peppers, green onions, salt and pepper and cook for 2 minutes.
Add the broth and heat to boiling. Reduce the heat to low and simmer for 15 minutes or until the pork reaches 170°F.
Add the noodles and cook for 5 minutes.
Makes 8 servings
