Hi again...I'm back with more bacon talk :) This morning we're gonna talk about Bacon recipes after all it's been ages since I posted one of my recipe diaries- been too busy doing the campaign work to think about food let alone write about it...and in between we're gonna talk about exactly why Lance Enderle so deserves your support in his attempt to raise the $13,000 he needs so he can bring home the bacon and fry up the Grand Ole Pork in a pan
Sped's Infamous Bacon, Lettuce & Tomato Soup
Ingredients:
1 lb. bacon, cooked and chopped into as big or small of pieces as you like
6 roma tomatoes, seeded and diced
2 heads romaine lettuce, washed and cored
5 cups vegetable stock
2 cloves garlic, minced
2 tablesspoons olive oil
1 medium leek, diced
sea salt and black pepper to taste
Directions:
- In frying pan or skillet, heat oil til sizzling. Sautee leek and garlic til you just start to smell the aroma of the garlic.
- In soup pot bring vegetable stock to rolling boil and lower temperature to low. Add sauteed garlic and leeks.
- Tear romaine leaves into big pieces and add to stockpot. Simmer til romaine just begins to wilt.
- In small batches transfer to a blender and puree til smooth. Return to stockpot.
- Over low heat, add diced tomatoes and bacon. Simmer 20 minutes. Add sea salt and pepper to taste.

Applewood Smoked Bacon & Apple Soup
Ingredients:
1 lb Applewood Smoked Bacon, cooked and chopped
6 Granny Apples, cored, peeled and diced
5 cups vegetable stock
1 medium leek, diced
1 tablespoon olive oil
1/2 cup Apple Cider or Apple Juice
1/2 cup shredded cheddar cheese (optional, for garnish)
Directions:
- In frying pan or skillet, heat oil then sautee leeks til they just start to brown.
- In stock pot bring vegetable stock to a rolling boil and turn heat to low.
- Add sauteed leeks and diced apples and 1/2 of the bacon. Simmer 20 minutes.
- In batches, puree in a blender and return to stock pot.
- Add the rest of the bacon and simmer another 20 minutes.
Serve topped with cheddar cheese.

Bacon Wrapped Honey Scallops
Ingredients:
2 dozen Bay Scallops
1 1/2 lb bacon
Honey
Herb de Provence Seasoning mix or dash each of thyme, garlic powder, sea salt, black pepper and basil mixed together
Directions:
- Preheat oven to 350 degrees F.
- Wrap one piece of bacon around each scallop and secure in place with a toothpick. Place on a cookie sheet.
- After all of the scallops are wrapped, drizzle each with honey and dust with seasoning mix.
- Bake in oven 10 minutes.
- Pull cookie sheet out of oven and turn scallops over. Drizzle with more honey and dust with more seasoning mix.
- Bake another 10 minutes or until bacon is as crisp as you like it.

Seriously... Lance is as progressive a candidate as there is and he has a real shot to take out a Republican incumbent who votes with Boehner and company 99% of the time. The goal for this bacon bomb is a mere $13,000...I've seen Daily Kos raise 5 times that in a day... please help him out and help all of us in the long run.
