We recently purchased a high-end blender, the type that is strong enough to make peanut butter from peanuts.
It's brought out my more creative side in terms of food choices. Being vegetarian and diabetic does limit some choice, but it also pushes my creativity some.
What's better, I was able to use the garlic scapes and cilantro from our own local CSA, knowing they were picked just hours before I put them into the concoction.
Last night, however, I think I came up with a thoroughly awesome idea. Namely, Garlic scape cilantro pesto. I improvise a lot, and don't use measuring cups, so if you try this yourself, adjust to taste, but here's what I used:
* 10 garlic scapes
* one bunch cilantro
* 2 tbsp olive oil
* 2 tbsp lemon juice
* 1/4 cup walnuts
* cheese to taste
Blend together until thoroughly mixed. If using a high-end blender, no chopping is necessary. If using the more common type, chop cilantro and scapes thoroughly before adding to mix and grate the cheese finely.
Eat.
Enjoy.
Fall into blissful coma.
