Did you ever burn out on a recipe ?
Maybe you found one that was simple and delicious and it became your favorite recipe and then you made it so many times that you can't even stand to look at it much less cook it and eat it ? I did. I burned out on Marinara Sauce1. It's cheap, easy to do and delicious. That's what I used to think anyway, before I made it two or three times a month, for twenty years. Now I can't hardly stand the stuff. I order white pizza these days, no more spaghetti and meatballs, no more lasagna.
Nevertheless, my recipe is a good one. I know most of us here are older, but I'll share the recipe anyway, in case anyone reading this is looking for ways to feed a family on the cheap. The key to making this an everyday recipe is to cheat a bit on the tomatoes. It takes a long time to peel, seed, and chop fresh tomatoes and to cook them down into a sauce. You gotta' use something in a can. It can be done with canned, crushed tomatoes or tomato purée. I like the smoother consistency of purée but it comes in 28-ounce cans and that's a lot of sauce if you're only cooking for three. My solution is to make a smaller batch using tomato paste. A little six-ounce can of tomato paste diluted with water to make 2 cups yields enough sauce for one meal. (I love the ingredient list on that stuff too; Ingredients: tomatoes.) Here's the recipe:
Marinara Sauce
1 6-oz. can tomato paste, mixed with water to make 2 c.
1½ T. olive oil (I use extra-virgin for marinara.)
½ t. dried pepper flakes (I save the little packets that you get when you have a pizza delivered.)
1 T. onion, chopped fine (Some people don't use onion at all.)
3 cloves garlic, minced
½ t. each, dried oregano, dried basil and dried thyme
S&P
red wine & chiffonade of fresh basil, optional
Put the oil in a saucepan over medium-low heat, add the peppers. When the oil is hot add the onions, sweat briefly. Add the garlic, sweat some more. Don't brown the garlic. Add a splash of red wine, reduce. Pour in the tomato purée, crush in the dried herbs, simmer. Stir in the fresh basil at the end.
That's a pretty good Marinara Sauce. You'll note that there's no meat in it. There never is in a Marinara. What is sometimes called "Meat Sauce" is actually a Bolognese
2. Put this sauce over some kind of pasta and serve it with meatballs or Italian sausage and you've got some good, cheap eats.

ACTIVITIES:
Thursday, June 25: Welcome BBQ. Starting from 4 or 5pm--or whenever the first kossack arrives at the Sundance Campground. Hosted by Thinking Fella
Friday, June 26, Daytime: Explore the park on your own or a hike in the Park with Ojibwa leading us-there are many hikes to choose from.
Friday, June 26, about 5 PM: Gather at the Apgar Picnic Area for a BBQ and picnic. Ojibwa will present his program on Montana’s Indian History which looks at Native American Prehistory, buffalo hunting, and the horse. This program has been presented at campgrounds throughout the state.
Saturday, June 27, Morning: Tentative schedule includes Red Bus tour up Going-to-the-Sun Road.
Saturday, June 27, Afternoon: Continue to explore the Park or possible Ojibwa-led hikes (Johns Lake Loop or Avalanche Lake).
Saturday, June 27, Evening: A group dinner at McDonald Lodge, in the Park. Great setting, decent food.
Sunday, June 28, Daytime: Ojibwa-led car caravan to Polebridge and Bowman Lake.

Announcing Asheville, North Carolina as the location
for our next Regional Event! 9.26.15
Asheville, N.C. is the destination for September 26, 2015! DKos Asheville, the In-Real-Life group under the leadership of randallt, has been setting the example for other IRL groups across the nation regarding registering people to vote, getting out the vote, having a state open thread and setting up strategy conferences for their region. Because of this impressive leadership we've asked randallt to be the State Leader for all of North Carolina. We've got important work to do on the ground there and randallt has shown he's the person to make that happen.
All states are welcome to attend this event and if you do you can expect to meet Markos Moulitsas in person, as well as some of the Daily Kos staff. More details regarding this regional event will be shared in the future so please stay tuned to Connect! Unite! Act!
