We have too much ham. Waaaay too much ham. Ordinarily, when Ann and I get some ham, we get a smallish-sized, low sodium, applewood smoked one from a discount restaurant supply place called Cash & Carry (what is called Smart & Final in California). But they didn’t have our usual ham in stock on Xmas Eve so we ended up with something bigger. What this means is that we will be buying freezer bags today and cutting the ham into pieces for future use. Ham futures. But I will save some out for dinners this week.
Last night was frittata night with leftover asparagus, sharp white cheese, onion, and diced ham. It was really good! There was even some left for breakfast. But then, eggs have a natural affinity for ham.
I suppose there will be a bean dish made with the ham...maybe some soup. The weather here has turned cold and damp — and nothing is better for cold and damp than soup. Hmmmm….maybe tonight.
Other ideas for leftover ham: deviled ham for sandwiches, ham on fresh greens as a salad, maybe some ham in scalloped potatoes?
