I had bigger ideas for this week’s story, but… you’ll hear about that eventually.
This isn’t much of a recipe, it’s something thrown together to use what I’m growing. I’ve made this with or without the cherry tomatoes; I’ve also done it with some marinara sauce added.
Spaghetti and Squash
yellow squash, seeds removed, diced
olive oil
minced garlic
oregano
grated Romano cheese
Penzey’s Pasta Sprinkle

A few weeks ago when I asked for yellow squash recipe ideas, Blacksheep1 offered this suggestion for baked squash with onions, butter, coriander, cumin, and ginger. I liked it; that spice combination reminded me a lot of the Ethiopian recipes I tried with niter kibbeh.

My actual plan for dinner tonight is eating at a restaurant for the first time since March. A friend is visiting and we'll go to his favorite sports bar for wings and beer. They didn’t move any TVs outside though, so we’ll have to watch the Lakers at my house. When he planned the trip we figured on going hiking tomorrow, but the fires have ruled that out.
