Recipe
There are 20 million cookbooks sold in the USA every year. Every newspaper and news site has a cooking section and recipes. There are millions of recipes on line. And here on the exalted Daily Kos, we publish our favorite recipes all the time. A veritable flood of food ideas. I have seen the response to cooking videos in comments. “I’m going to try that” or “That’s a great idea.” How many of us carry through with such riches of information? Despite my best intentions I seldom do.
This is one I want y’all to try. It will become a mainstay. I have published it before! but here is more detail. Though I eat meat twice a day, this is vegetarian and satisfying.
One-pot pasta (inspired by a Martha Stewart recipe)
Prepare 4 1/2 cups stock. I dissolve 3 bouillon cubes right off.
Break up a pound of angel hair pasta and place in a deep skillet.
Add: 12 oz. cherry tomatoes (available year round as grape tomatoes)
one sweet onion sliced fine (shallots are just as good)
one big red pepper cut into 1 inch squares
4 or more thin-sliced cloves of garlic
½ tsp red pepper flakes….no more than that
2 tbsp olive oil
leaves from 2 large sprigs of fresh Basil (this is important and worth getting some fresh)
salt and pepper as always.
Pour the stock over and boil the mixture, stirring, until stock is almost evaporated.
Serve in bowls sprinkled with Parmesan cheese and more Basil leaves.
