Hot, Chicken
I’m sure y’all have heard of Nashville hot chicken, which is a fad I will probably never try. It’s reportedly spicy enough to make a strong person cry. I had read reports about Popeye’s Spicy Chicken sandwich, so I tried one. Pretty good, but still too spicy for my taste.
Costco chicken is such a bargain, and pretty good, so we seldom cook our own, except in some casserole dishes. So I decided to make Jessica Seinfeld’s (of course) PEACH AND SRIRACHA CHICKEN WITH COCONUT RICE. The recipe is at the link, and it turned out fantastic beyond belief. I follow her recipes carefully, but she likes things spicy, and I have sometimes moderated the heat a bit. This called for one tablespoon of Sriracha sauce, which I used. The heat was there, but it was just right.
Speaking of heat, Mexico is experiencing a heat dome accompanied by drought. Meteor Blade’s environmental story collections here and here and Pakalolo’s here cover this and more climate news. We have here in California a long term weather blog by Daniel Swain called weather West. It’s only updated about monthly but has proven to be quite accurate. The essence of his predictions is that the west coast will be cool for much of the summer while the rest of the country suffers mega-heat, then in late summer it’ll be super-hot all over, just in time for our fire season here in California. This prediction is proving to be accurate for us so far this year.
I know KTK readers live all over the country. What have you been experiencing? Is the heat noticeably worse this year? Air conditioning is widespread, but not everyone has it. It’s fairly rare here in coastal California, though required in the center of the state. We added A/C with our new furnace, but only use it a few times a year.
