Like many, we will be dining on leftovers tonight — candied sweet potatoes, a gluten free stuffing (all veggies, sausage, nuts, and dried cherries — no bread) — and some left over chicken. Our small turkey is still defrosting in the fridge...we had dinner with friends yesterday and feasted on their turkey. It was lovely — and that turkey lethargy has lasted all day. ( Well, maybe part of it is from all that pumpkin pie. That’s a confession.)

I think I would rather have turkey than raccoon but I am sure that is a modern prejudice. According to the article, it is a very American food. A food of survival. And there is a lot of history that goes along with it.
