Tonight after putting my daughter to bed, I plan on drinking a long-awaited and eminently-satisfying toast to justice. Though I don't know how the toast itself will go, it will undoubtedly be erudite, poignant, savvy, and unheard by anyone who gives a blue heron's ass (besides myself).
What's important is what I shall be toasting with, which I offer here for your pleasure:
Classic Mojito
Ingredients:
4 oz. Bacardi rum (80 proof)
2 oz. club soda
1 lime
1 fistful of fresh mint leaves
2.5 tablespoons of raw sugar
1 sugar cane
Ice
Place sugar and mint into a pestle with a splash of club soda. Halve the lime, and use a fork to juice both halves into the pestle. Mull the mixture with a mortar until the smell of Wrigley's Spearmint Gum reaches your nose. Transfer the mulled mint-lime-and-sugar mixture into a large cocktail glass, along with one of the lime hulls. Top with ice, add rum, and finish with the remaining splash of club soda. Stir gently and enjoy.
