Tonight, my husband and I are honoring the return of a very special friend. A Seattle area native who moved to the "Right Coast" for a few years has returned, just in time for a nice bout of snow.
I should note that my friend is a huge fan of bacon, and I'm a huge fan of Iron Chef. So tonight is "Battle Bacon"...sorta.
Tonight's menu is:
Appetizers:
Seared baby scallops wrapped in bacon and served with garlicky clarified butter
Maytag blue cheese spinach and artichoke dip with bacon crumbles, served with warm crostini
Salad:
Spring greens with diced peppers, mandarin oranges and dried cranberries served with hot bacon dressing
Entrees:
Seared bacon-wrapped filet mignon
Bacon, garlic and rosemary roasted red potatoes
Haricots verts with a balsamic bacon glaze
Dessert:
Creme brulee (sorry, no bacon....I only go so far)
