Harold Ickes be damned, we're going to have a candidate reach 2118 this week. And yes, while it probably will be Obama, it could be Hillary, and I propose, after a long campaign season, the "We" in Yes, We Can! deserve a drink to mark the occasion.
This probably isn't a champagne celebration moment, but it does deserve a drink to celebrate this being over
My drink du jour will be, in recognition of Puerto Rico's vote on Sunday, the very Cuban.. (hey, close enough right?) Mojito
My variation of the recipe is a coconut variant.. almost Pina Colada like.
1 1/2 teaspoon powdered sugar
Juice from 1 lime (2 ounces)
4 mint leaves
2 oz of Bacardi Coco Rum (coconut flavored Bacardi)
a generous squeeze of Coco Real (cream of coconut)
Ice
Club Soda to taste (a couple of oz works)
a small sprig of mint
Usually served in a Collins glass.. a tallish straight sided glass.
Traditionally you muddle and gently crush the sugar, lime juice and mint leaves in the bottom of the glass you drink in (with a "stick" called a muddler.) A pestle and morter works just as well, and using a bowl and the back end of a tablespoon would work in a pinch.
When you've turned the mint into a sticky paste, you can add the cream of coconut, ice, rum and then club soda. Garnish with the mint sprig and then add a dash of rum or lime, if necessary, and enjoy your presumptive nominee.
