Out of roughly 80 groups in the DNC community, I found one that was in Spanish:

Granted, this is just a symbol, but I feel it does represent a mindset within the Democratic DC bubble that doesn't get it, doesn't understand that the future of this country must include fully embracing and empowering all people.
It's quite clear that the Latino community needs some serious embracing.
What can we do to help?
The William C. Velasquez Institute in non-profit, and they can use donations.

Here's the State of Arizona website for registering to vote:

It's got a Spanish language dialog option.

Bigger question open to discussion, and I hesitate to make this into a flame war .. but frankly, I don't think the Democratic Party reflects the nature of the voters it's trying to attract.
I'll drop the 'bomb'.
The leadership at the top of the Democratic Party is overwhelmingly still old, white, male and Northerner - and the religious and LGBT diversity is not there, either.
As long as the leadership at the top of the political machine remains staid and happy with the status quo, I don't see how they can even recognize that "something happened". It's not their necessarily 'racist', but they may be clueless.
I'm 'white', 'old' and 'Jewish'. If was at the head of DNC and saw that saw that law coming up [and everyone KNEW it was coming] I would have been organizing, organizing, organizing the Latinos, the Native Americans, the black community, the Asian community - they will ALL be impacted by this law.
But most of all - WHY DO WE HAVE TO WAIT for something like this horrible law to take action?
WHY?

Important update sort of "on topic" update .. :
Texas next to pass one of these "laws"?

First Arizona, next Texas?
At least two state lawmakers are planning to file immigration bills similar to a controversial law that recently went into effect in Arizona once Texas lawmakers get back to work in January.
State Rep. Leo Berman said he's planning several bills, including one that would require presidential and vice presidential candidates to prove their citizenship to the Texas Secretary of State before their names can be put on the ballot. The Arizona law requires presidential candidates to produce birth certificates.
"We'll do it," said Berman, R-Tyler, and a former Arlington mayor pro tem. "We'll do it from now on. If he can't prove citizenship ... he won't have a place on the Texas ballot."
Berman was referring to President Barack Obama, whose birthplace has been questioned by some since before he took office. Although his campaign produced a birth certificate that shows that he was born in Hawaii, some speculate that he truly was born in Kenya, where his father lived.
