Here's a chicken noodle soup recipe that Angie in WA State posted in Tuesday's diary.
Homemade Chix Noodle:
2 boxes organic Chicken broth (or the juice from a whole chicken, simmered overnight on stovetop then deboned)
1 can chicken meat (or the meat from that chicken you simmered)
Bag Egg Noodles (I'm trying homemade noodles this year)
1 bunch celery, 2/3 finely sliced and 1/3 large chunks
2 whole cloves Garlic OR granulated garlic 1-3 tbsp to taste
1 small onion OR 2 tbsp granulated onion
2 tsp ground thyme
pepper to season
(optional) 3-6 Bay leaves (take them out before serving!)
Everything but the noodles in the oven in a pot with lid for a couple hours on 350 F, until most of the thinly sliced celery and/or cabbage is broken down and all you see are the big chunks of celery.
Bring to stovetop, medium/med high heat, drop in the noodles for 30 mins before eating, or until soft.
DO NOT BOIL. the noodles will turn mushy.
Alternatives and/or additional items:
Carrots, small dices in original pot in oven (1 cup)
Peas (1/2 cup) on stovetop only or they'll disappear
White Cabbage 1/4 to 1/2 head, finely shredded, in original pot in oven (I like this)
