Here is part two of Sunday's diary - I lost the diary about 15 minutes before I had to leave home and didn't have time to recreate the whole thing. This is an appetizer I made for a New Year's Eve party we attended, and I'm not kidding, they were gone in minutes. The official name is Pancetta Crisps with Goat Cheese and Pear. Major yum and it takes about 20 minutes to make. So join me as this:

First, heat your oven to 450. Prep a baking sheet with aluminum foil. Cut about 3 oz of pancetta into slices. The pancetta I used for this recipe was round, so I just cut it in half. Place in oven for 8-10 minutes. I did 10 for this recipe and they came out a little dark.
While the pancetta is doing its thing, core and slice a Bartlett pear into rounds:
Remove pancetta to paper towel lined wire rack to cool.
Place pancetta on pear slices.
Top these with goat cheese:
Then top with fresh ground pepper, honey and a garnish if you want - here I used fresh chives.

This comment from zaka1 in yxorknot's Three Dollars post is worth reading in its entirety. But this last paragraph is the answer I'm going to give the next time I hear someone say that they "want their country back."
I fear for us and someday we will be asked why by our children, by the younger generation, and by all the people that continue to suffer while billions are spent on campaign financial and elections. I don't think I could sit and stuff my face on a $30,000.00 a plate dinner (I'm talking about both parties) to get someone elected while some poor person starves and goes without medication or freezes to death. I would think myself a monster.
