Sauces are liquid or semi-liquid and are used to coat other food items. They come in many shapes and flavors. Some are easy to make and some can be very time consuming and prone to going wrong without notice. Sauces in ancient time were used to mask the fact that some of the food was not exactly of the freshest.
Sauces and their cousins dressings coat meats, pastas, rice, vegetables, and salads. Recently I came up with a recipe that made 27 cups of chunky tomato sauce. I then proceeded to take that basic sauce and jazz it up until I had a lot of different flavors. I was trying to come up with something that my niece and her family could use to make inexpensive meals. I love sauces on pasta or rice. I have also enclosed my recipe for Chinese Barbecue Sauce which is the barbecue sauce I use all the time. I also made a quick curry sauce and that recipe is here too.
Chunky Tomato Sauce

6½ pounds diced tomatoes -- canned, fire roasted
6½ pounds tomato sauce
1 large sweet onion -- diced
6 cloves garlic -- minced
1 tablespoon seasoned salt
1 teaspoon seasoned pepper
2 tablespoons sugar
4 stalks celery -- diced
2 tablespoons olive oil
1 tablespoon light soy sauce
6 ounces tomato paste
1 cup red wine
1 tablespoon balsamic vinegar
Heat stockpot to medium high and add olive oil. Add onion, garlic and celery and cook until softened.
Add remaining ingredients and heat until boiling. Reduce heat and simmer for 30 minutes.

Chinese Barbecue Sauce

2 shallots -- minced
4 cloves garlic -- minced
1 tablespoon fresh ginger root -- minced
1 tablespoon olive oil
6 ounces no salt added tomato paste
¼ cup hoisin sauce
2 tablespoons rice wine vinegar
1 tablespoon low sodium Worcestershire sauce
1 tablespoon low sodium soy sauce
2 tablespoons Dijon mustard
¼ teaspoon crushed red pepper
4 tablespoons molasses
1 tablespoon brown sugar, packed
Heat oil in saucepan on medium. Add shallots, garlic and ginger. Cook until softened.
Add rest of ingredients and cook until it starts to bubble, stirring to prevent burning.
Lower heat and simmer for 30 minutes stirring occasionally..
Store in a jar with lid.

Curry Sauce

2 tablespoons flour
2 tablespoons olive oil
2 cups milk
1 tablespoon tahini
1 teaspoon seasoned salt
½ teaspoon seasoned pepper
In sauce pan add olive oil and flour. Mix together well and cook for a couple of minutes.
Add rest of ingredients. Whisking constantly heat until boiling. Stir until thickened.
