Have you ever cut out cupons and looked at the recipes companies include to intice you to try their products? I usually don't but, that changed this month when i saw one i couldn't pass up. Naturally, i couldn't find the brand of chicken sausage i cut out the coupon for. I tried the recipe anyway, with a slight variation, and it's not bad. Join me past the Kos cloud for more.....

2 packages 12 oz. Roasted Garlic Chicken Sausage, fully cooked
1 jar 24 oz. classico (or any brand) Tomato & Basil Pasta Sauce
16 oz. rigatoni pasta
2 TBsp extra virgin olive oil
1 cup thinly sliced yellow onion
2 cloves garlic, minced
1 cup sliced mushroom
1 large yellow bell pepper, thinly sliced
1 medium zucchini squash, sliced diagonally
The recipe calls for the sausage to be grilled on an oiled grill rack, 4-5" over medium low heat, with the lid closed for 7-9 minutes. I, however, don't have a grill rack, so i sauteeed the sausage along with the garlic, onions, and olive oil for 5-7 minutes. Then, i added the rest of the vegtables and continued to sautee for another 5-7 minutes over medium heat. While you're doing that, boil the water for your pasta. Cook according to instructions. The recipe calls for 1/4 cup of pasta water to be reserved and added to meat and vegtables, but i didn't, seeing no point.After meat and veggies look fully cooked, add pasta sauce and simmer for 3-4 minutes. Portion the pasta into 8 serving bowls and top with sauce.
