This is my on going series of recipes from my Italian grandmother and mother. My grandmother was very frugal and to a great extent so is my mother. But they always served great food because the two are not mutually exclusive. So here's an easy peasy way to serve canned peas in the summer and make them taste great.
My mother always made this in the summer and now that I am staying with her for a while this summer, she made it for me today. It's a salad made from canned peas. I figured canned peas are pretty cheap when they go on sale and they have protein and are filling.
Drain a can of peas (if you really want to splurge, get the baby le seur peas). Add a few cap fulls of cider vinegar and the same amount of oil (olive oil tastes better), a little chopped onion, a pinch of salt (or more to taste) and some black pepper. Stir and refrigerate. It's better if you let it marinate in the frig for a a few hours. You can serve it cold or room temperature. It will keep in the frig for a good number of days. It's refreshing on a hot summer day and a good way to get some protein and fiber in your diet.
