On my move from the big city of San Francisco to the small Northern California town of Chico California, inspired by the movie Julie on Julia, I decided to start making bread from Beth Hensperger's book THE BREAD LOVER'S BREAD MACHINE COOKBOOK.
Beth's book calls for a house bread using rye, (I hate) and powered fructose which I don't have. So I decided to use what I did have, which is Corn Flour I picked up at an Indian store in San Francisco. Inspired by Beth's House Bread recipe, I decided to use the Corn Flour and make a Corn Bread. I threw the following into the Breville Bread machine:
1.5 cups water
2 tablespoons Olive Oil
2 cups bread flour
1 cup corn flour
1 tablespoon sugar
1 tablespoon gluten
1.5 teaspoon salt
2.5 teaspoons bread machine yeast
I let the machine kneed the ingredients together, and then had to add a couple of tablespoons water to get the dough ball the right consistency. Once I got the ball the right consistency I just let the machine do its thing.
CORN FLOUR / OAT FLOUR / GRAM FLOUR
On a side trip to a small shop off of Polk Street in San Francisco, I saw some flours I had never seen before. The first to catch my eye was Corn Flour. Then I saw Chana Besan, and Oat Flour. I did some reading I found that you can substitute up to half the required flour in a recipe with Corn Flour. I have also to great success have substituted the Oat Flour for wheat flour creating a really yummy Oat Bread. I have yet to attempt anything with the Chana Besan (Gram Flour) but I will soon!
THE BREAD
The dense yellow loaffilled the house with the smell of fresh baked corn. I decided to try thr crusty and first piece toasted with Butter and honey. The texture was wonderful, and the taste, wow. It was a little slice of heaven!
