Good Thursday morning and Welcome to my diary, GUS: Thursday Morning Open Thread...with a little chicken soup

So today just happens to be my 9 month anniversary of being tobacco free.

I find I don't miss it. Instead, I find I eat. I have always loved good food, but now that I can actually taste it, I eat it more and enjoy it more.

So, Tuesday evening, I made chicken soup. It's starting to cool down here. It's been in the mid to low 90s...practically Fall already and Mom likes soup and a pot will last her for a week of lunches and a few suppers.

The thing about soup is, one can make a great soup with a few basic rules and some imagination. With that in mind, here is my chicken and wild rice soup.

Ingredients:

1 1/2 pounds chicken breast cut into 1" cubes (or thereabouts)
3 carrots peeled and diced
3 stalks of celery diced
1 package of mushrooms sliced
1 small onion diced (I use a shallot because onions give me heartburn)
2 cloves of garlic minced (optional)
4 tbls olive oil
3/4 cup wild rice
1 32 oz box of low sodium chicken broth
2 cups water
1/4 tsp pepper
salt to taste
2 bay leaves
1/2 tsp dried basil

Directions:

In a large pot, heat olive oil over medium high heat til hot. Add cubed chicklen and cook til just cooked through, 6-7 minutes. Remove from heat and set aside. Lower heat to medium and add onion and garlic and cook 1 or 2 minutes until onion is translucent. add 1 tbls olive oil if needed and then add carrots, celery and mushrooms and cook til tender - about 5 minutes - stirring occasionally.

When cooked, add chicken, chicken broth, water, rice, salt, pepper, basil and bay leaves.Stir to mix and then heat to boil over high heat. Reduce heat and simmer, covered, for approximately 45 minutes or until rice is cooked tender.

Serve.

A tag is a way to search for this diary. If someone is searching for "Barack Obama," is this a diary they'd be trying to find?

Use a person's full name, without any title. Senator Obama may become President Obama, and Michelle Obama might run for office.
