wittered on in an earlier diary about slashing carbon emissions by cutting out meat, and proposed that, if vegan seems too extreme for most folks, 90 percent vegan might be a do-able compromise.
It occurs to me that posting a 90 percent vegan "hack of the day" from time to time might make what otherwise seems like austerity sound like a delicious idea.
My food photography skills are in their infancy, and my "plating" technique (oooh! get me! so chef-y!) is rudimentary, but this picture came out pretty well, so I thought I would share it.
This yummy 90 percent vegan hack is two fried eggs atop sautéed mushrooms and spinach. Behold, the eggy goodness, the meaty umami of the mushrooms, and the Popeye levels of nutrition in the spinach!
One large egg contains 6 grams of protein, and only 71 calories. So here's 142 of my daily allotment of 220-ish calories from an animal source - and they are delicious calories. The richness of the yolks bastes the underlying layer of veg in creamy sauce-y goodness, making a dinner of plants into something truly decadent and amazing.
And eggs are not particularly carbon-emission-intensive, with a carbon footprint well below beef, lamb, chicken, canned tuna, turkey, farmed salmon, and pork.
Locally raised eggs would be even better (these are not).
Accompaniments might include a big green salad with kale and romaine, topped with sunflower seeds, sliced olives, cucumber slices and vinaigrette, and/or a nice bowl of fresh berries. (Yes, I know it matters where all of these things come from. But reducing meat is what I am after here.)
Yum. And better for the climate than a burger, a salmon fillet, or something involving cheese.
