Got a Favorite Sausage ?
Yes, my friends, it's that time of year again. Football season is underway, Oktoberfest starts this Saturday and a nation's thoughts turn to charcuterie. Whether it be bratwursts, head-cheese or the humble wiener, everybody has a favorite sausage.
Charcuterie, of course, is the gastronomic term for sausages and prepared pork products, both the raw and the cooked. I quote Larousse Gastronomique:
The Roman porcella law fixed the manner of rearing, feeding, slaughtering and preparing pork, and the Romans were probably the instigators of pork butchery as a trade. It was not until 1475 that, in France, an edict of the provostship of Paris granted to 'maitres chayrcutiers-saucissiers-boudiniers" the right to sell cooked and prepared pork flesh (and also fish during Lent). In 1476, these tradesmen formed a special category, distinct from the roasters (or oyers, with whom they had been confused until then), but they still formed part of the corporation of butchers. It was not until 1513 that the chaircuitiers (from chair, 'flesh' and cuit, 'cooked') had the right to lay in a supply of pork meat directly, without being obliged to go to the butchers.
There's really no such thing as an American charcuterie. Most of our sausages are imports. Everybody eats hot dogs, and there are numerous regional variations including Tucson's own Sonoran dog
1, but the Frankfurter came over with German immigrants.
I'm pretty sure that what we call "breakfast sausage" is some form of English banger. If you visit an American supermarket you might think that there are only two kinds of "Italian" sausage, sweet and hot, but that uncooked, fennel flavored sausage is only one of many Italian sausages
2 that Americans enjoy. There's pepperoni, mortadella, which we call baloney, and the hard, dry salami that we call Genoa salami, not to mention prosciutto and capicola. We eat a lot of Mexican chorizo. It's a loose, uncooked sausage flavored with garlic, vinegar and ground Chile, not to be confused with Spanish chorizo which is a dry, cured sausage flavored with pimentón, or Spanish paprika.
Since it is almost Oktoberfest, German charcuterie3 deserves a special mention. Larousse is effusive:
The land of charcuterie. It is, above all, the products of the pork butcher that have made the gastronomic reputation of the region beyond the Rhine, particularly in Swabia, Westphalia and Bavaria, where the hams are renowned, as they are in Holstein and Saxony. There is an astonishing range of sausages, both hot and cold: sausages for sandwich spreads, made of liver or smoked pork, sausages made for grilling, smoked or stuffed with herbs, particularly in Nuremberg; and sausages for poaching, lightly or heavily spiced, including the delicious Weisswurst, made from veal, beef and parsley; the large Bockwurst, crunchy and juicy; and the frankfurter, which is always eaten with a round roll and mustard. There are also the saveloys, brawns (head cheeses) and black puddings (blood sausages). This charcuterie, often served cold, forms the main part of the family dinner.
I usually make some of those Weisswursts sometime during Oktoberfest, when I can find them. I serve them with a Bavarian
kartoffelsalat and some malty Oktoberfest beer. My favorite sausage dish is probably a Chili-Dog: a natural casing wiener, garnished with some good leftover Chili, spicy, brown mustard, cheese and some sliced jalapeños.
