I was getting mac and cheese ready to go in the oven and nearly forgot the ingredient that you can’t really notice unless you leave it out… onion powder. And I got to thinking about the seasonings we use in and on our food. Our refrigerator condiment shelf overfloweth. There is, of course, ketchup... minus the too-often-present high-fructose corn syrup. We have regular yellow mustard, as well as coarse Dijon. The shelf rounds out with horseradish, toasted almond and hot chili oils.
Then there’s hot sauce, which nearly gets its own shelf. Tabasco, chipotle Tabasco, and ::goes to count:: at least four other bottles ranging from fairly innocuous to omfgthat’shot. We have both traditional red sriracha (no brand but Huy Fong will do, we gotta have our rooster sauce!) and green as well, and we do in fact go through rooster sauce faster than ketchup.
We also are never without black pepper and a shaker of berbere, the ubiquitous spice found in Ethiopian cooking. It goes, as far as we can tell, with everything but pork, and it gets shaken on everything from soup to chicken to eggs.
