Alright, we are heading into Autumn. Hot days, cool nights. My favorite season, except for the allergies. When Autumn comes, I combine Summer and Autumn recipes. Hot and cold.
Let’s explore the Summer time recipes.
The Cuban sandwich. It has hot and cold combined. My all time favorite sandwich. A pain to make. But worth the time.

And salads were a no-brainer. Anything I find in the frig combined with Romaine or fresh Spinach and dressing.

Now, let’s, go on to the hot.
Soups
Casseroles
Hot Main Dishes.
First, soups and stews. I wouldn’t call chili a soup, it is a stew.
My recipe.
Chili with Beef ‘n Beans (yes, I use beans, Hey I’m from Iowa, so sue me). But, I do like a bowl of the Texas red.
Beef ‘n Beans Chili
Ingredients: Servings: 4 large servings.
1 lb. ground beef
2 tablespoons chili powder
16 ounces tomato sauce
1—2 cloves garlic, crushed or minced
1/2 teaspoon salt
1/2 teaspoon ground oregano
1/2 teaspoon ground cumin
1/2 teaspoon paprika
1 bundle green onions, finely sliced
1/4 teaspoon ground black pepper
1/4 teaspoon cayenne pepper
2 (14 ounce) cans 1 can red kidney beans, 1 can black beans, drain, rinsed
1 (10 ounce) can tomatoes, diced with green chilies
Directions:
Brown ground beef until there is hardly any pink. Add diced onions. Cook a minute. Add garlic. Cook a minute.
Combine spices, tomato sauce, diced tomatoes with green chilies in a crockpot. Add ground beef mixture. Stir. Cover with lid.
Crockpot settings: High 6 hours, Low 12 hours.
If the chili is a bit thick, you can some beef broth.
Serving suggestions:
Top with shredded cheddar cheese, pepper jack sour cream, sliced green onions, crispy tortillas, or oyster crackers.
Serve with corn bread.
People at the office vacuum/scarf it up.
Hamburger Stroganoff
Ingredients

- 1 onion, minced
- 1 lb ground beef (or 1/2 and 1/2) or 1 lb ground turkey (or 1/2 and 1/2)
- 1 garlic cloves, minced
- 2 teaspoons flour
- 1/4 teaspoon black pepper
- 1 (10 3/4 ounce) can cream of mushroom soup
- 8 ounces sliced fresh mushrooms
- 2 tablespoons catsup
- 1/2-1 cup sour cream
- parsley or chives or dill
Directions
- Brown ground beef with onion until beef is no longer pink and onion is clear; add garlic and mushrooms; sauté about 2 minute.
- Drain excess fat.
- Add soup and remaining ingredients except sour cream.
- Simmer uncovered 15 minutes.
- Stir in sour cream and parsley, chives or dill.
Serve with rice or noodles.
I would make a hamburger stew using a beef stew recipe. Substituting ground beef instead on stew beef.
