So I had a check up the other day, and my doctor put me on cholesterol medication. Sigh. Reading up on the side effects….. um, no. Makes you tired and causes insomnia? And the digestive stuff….
I’m a vegetarian, and yes you can eat unhealthy and vegetarian. I like cheese way too much, that’s why my cholesterol is so high. So, what are some suggestions for a salty tasting (not actually salty, just tasting), tangy snack? I don’t like sweet snacks, just salty/tangy. Yes, I’ll be adding more fruit to my diet, that’ll be all the sweet taste I need. Substitutions for cheese & crackers as a snack, for cheese sauces for vegetables — my current lunch is vegetables in a alfredo-like sauce, baked in either puff pastry or I stretch out a biscuit & make it into a pocket. I’m transitioning from 2 days in the office to 3, and while that doesn’t sound like a big difference, it is. So, dinner this week & next is frozen vegetarian “protein bowls” (I forget who makes them, maybe Green Giant?) that I add maybe ½ cup of spinach & mushrooms to, and yes, a couple of slices of cheese. I mostly make my own dinners, one favorite is quinoa, vegetables & a tahini/yogurt sauce. Easy, freezes well & I like the taste.
I like to batch cook & freeze half for the next week. Salads are annoying because you can’t make — or even buy — them in advance. Example: for breakfast, I make “overnight” oats with almond milk & berries. I make enough for the week on Sunday afternoons. I just like to get all the cooking done at once. So — any thoughts out there from my fellow kossacks? Any vegetarian snacks you like? A low fat or vegan version of alfredo sauce? Any tangy, cheesy-tasting snacks that are healthy & will help me lower my cholesterol, or at least not raise it more?
