Portugal is a gorgeous country, I’m told. The closest I have come is via viands...
Portugal is the oldest nation state on the Iberian Peninsula and one of the oldest in Europe, its territory having been continuously settled, invaded and fought over since prehistoric times. It was inhabited by pre-Celtic and Celtic peoples, visited by Phoenicians-Carthaginians, Ancient Greeks and ruled by the Romans, who were followed by the invasions of the Suebi and Visigothic Germanic peoples. After the invasion of the Iberian Peninsula by the Moors, most of its territory was part of Al-Andalus. Portugal as a country was established during the early Christian Reconquista.

Chef John makes Caldo Verde [9:59]:
According to another YT chef, you can use collard greens instead of kale. I think it’s one of those “every Mom makes it differently and I love the version MY Mom made” things.
Portuguese wines have enjoyed international recognition since the times of the Romans, who associated Portugal with their god Bacchus…. Some of the best Portuguese wines are Vinho Verde, Vinho Alvarinho, Vinho do Douro, Vinho do Alentejo, Vinho do Dão, Vinho da Bairrada and the sweet Port Wine, Madeira Wine, and the Moscatel from Setúbal and Favaios.

Vinho Verde is terrific. By all means try it, if you like wine.

Shrimp Mozambique
This shrimp dish is a party in a pan!
All you need is some good Vinho Verde, fresh crusty bread for dipping into the sauce, and friends to share it with!
Although the recipe is called a Mozambique, it’s a favorite Portuguese dish served in many Portuguese restaurants. It’s given the name because of the spiciness from the piri piri hot sauce which contains the red hot peppers originating in Africa. Piri Piri means “pepper” in Swahili.

How to make piri piri sauce [5:51]:
In the 1st millennium bce the Celtic Lusitani entered the Iberian Peninsula and settled the land, and many traces of their influence remain. According to national legend, though, Lisbon, the national capital, was founded not by Celts but by the ancient Greek warrior Odysseus, who was said to have arrived at a rocky headland near what is the present-day city after leaving his homeland to wander the world and who, liking what he saw, stayed there for a while; his departure was said to have broken the heart of the nymph Calypso, who, the legend goes, turned herself into a snake, her coils becoming the seven hills of Lisbon. Of course, had Odysseus actually come to Portugal, he would have found the land already well settled by the Lusitani.

Bolinhos de Bacalhao [12:53]:

When I lived in NYC, I knew an editor and his wife who lived across the Hudson in Newark — in an area adjacent to the Portuguese-American area. They always had the best spread for their Christmas parties: Portuguese sausages, cheeses, breads, and of course plenty of olives and condiments and stuff. I don’t think this was one of the sausages they offered b/c theirs was a cold spread, but it looks delicious [5:27]:

The fauna of Portugal is a mixture of European and North African types. As in Spain, the wild goat, wild pig, and deer can be found in the countryside. The wolf survives in the remote parts of the far north and northeast, and the lynx inhabits the Malcata Mountains. The fox, rabbit, and Iberian hare are ubiquitous. Birdlife is rich because the peninsula lies on the winter migration route of western and central European species.
