Ever want to go to a tropical isle? There is probably a reason that South Pacific is the musical I love the most… Oklahoma’s pretty good, and Company is fabulous, but...South Pacific won my heart when I was a kid, and nothing has yet supplanted it. So today we go to a tropical island.
Well, fuck me with a broomstick! Guam is in fact in the north Pacific. I’m still ROFLMAO.

Red rice. I have annato (achiote) seeds, but this is basic [14:56]:
And I am totally with her:
Today we'll be making a fiesta table must have, red rice. Many people have asked if I will be using a rice cooker, no I won't because I was taught to cook it on a stovetop.

The Chamoru people settled the island approximately 3,500 years ago. Portuguese explorer Ferdinand Magellan, while in the service of Spain, was the first European to visit the island on March 6, 1521. Guam was colonized by Spain in 1668.

Please note: I think there’s only one video embedded in this diary that does not have its recipe printed at YT under “show more” in the description. That video has a link.
On Guam, a Chamorro empanada recipe conjures up only one image. That's the achote-flavored masa harina crust with an achote-flavored, ground-rice-and-chicken filling. This is the Chamoru's meal-on-the-go. If you do not have a tortilla press, use two, flat-bottomed plates.

One of the hardest questions I’ve been asked is, “What is your favorite food?” In my experience as a foodie it’s really not that easy to pick just one. But if you were to ask me instead what it is that I crave the most often, I would say that it’s the local foods here on Guam. A plate of barbeque, kadon pika, red rice and a side of kelaguen is usually the image that forms in my head, leading to that rumble in my stomach which sparks that resolute desire only satisfied once I’ve leaned back from the table, smug and fulfilled, with a once-full plate now empty in front of me.

The Mariana chain of which Guam is a part was created by collision of the Pacific and Philippine Sea tectonic plates, with Guam located on the micro Mariana Plate between the two. Guam is the closest land mass to the Mariana Trench, the deep subduction zone that runs east of the Marianas. Volcanic eruptions established the base of the island in the Eocene, roughly 56 to 33.9 million years ago. The north of Guam is a result of this base being covered with layers of coral reef, turning into limestone, and then being thrust upward by tectonic activity to create a plateau.

Guam is a challenging place to summarize in just a few words.
It’s so much more than its miles upon miles of sandy beaches, waterfalls, coconut trees, and coral reef ready for you to explore. Our unparalleled sunsets, starry night skies, and rolling mountains and valleys help paint a picture of what you’ll find here but don’t go nearly far enough.

Guam is culturally diverse, with Chinese, Japanese, Filipino, Korean, and other Asian communities of significant size in addition to its indigenous population and people from the mainland United States. As a centre of transportation and communication for the region, it also attracts many islanders from various parts of Micronesia.
