“Magical, Youff? Isn’t that hyperbole?”
Well, maybe a little bit, because I’m not talking about psilocybin mushrooms.
But there are so many different types of edible mushroom, each with its own distinctive flavor, and even those button mushrooms from your local supermarket are delicious in a dazzling array of dishes.
But what is a mushroom, exactly? A type of fungus — but what does that mean?
Adam Ragusea explains [13:54]
My Norwegian gf told me that, during wild mushroom season, their government set up checkpoints to make sure the gatherers hadn’t gathered any poisonous ones. Here in the States, I’m not risking it. Creminis are just fine.
Because you really don’t have to get fancy to make marvelous mushroom dishes.
[M]ushrooms are incredibly versatile. Not only are there so many kinds, from porcinis to morels to chanterelles and more, but also these edible fungi are as at home in an Italian pasta as they are in a Chinese-inspired soup or a French cream sauce or a good old American Thanksgiving side dish with wild rice or mushroom gravy. Their meaty texture makes them a mainstay in vegan and vegetarian cooking, but they’re also good companions to chicken or red meat.

Roasted Wild Mushroom and Potato Salad from Chef John
“Wild” mushrooms have never been less so, and that’s a good thing. Not that hunting for mushrooms in a dewy forest isn’t fun, but I’ll take a nice safe grocery store over actual labor anytime.

Soup
Hungarian Mushroom Soup from It’s Only Food
Paprika-tinged and soothing, there’s something uniquely cozy about this creamy mushroom soup. [...] Meaty, earthy mushrooms are lifted up by the herbaceous lightness of dill and the subtle tang of sour cream, while a generous sprinkling of paprika turns the whole fragrant pot a blushing shade of pink.

Entrees
I have grilled or sautéed burger-sized portobello mushroom caps, put them in toasted buns, and eaten them as burgers — they are such flavorful and meaty umami bombs.
But let’s look at some more interesting mushroom-centric entree ideas.
I call my version Fettuccini Alfredo con Funghi, and I’ve made it with only button mushrooms, with portobellos, and with a mix of more interesting mushrooms like oyster & shitake. No matter what kind of mushrooms you use, it’s delicious! In English, it’s simply:

Baked Mushroom Risotto from Chef John
I was playing around with a baked paella recipe, and beganwondering what would happen if I used a similar method for doing risotto. Asyou’ll see, the beginning and the end of the recipe are pretty standard, butwe’ve taken the middle 15 minutes and moved it into the oven, in an attempt toeliminate those dreaded “variables.”
