Starting with the recipes listed in this thread's posts (Actually offtopic from an otherwise forgettable trollposting), I've decided to start compiling recipes from fellow Kossacks in my diary, and start each one with one I use myself.
My recipe for buttermilk waffles is in the extended entry...
So, posting directly from memory (and hoping my boss doesn't catch me!), I present my recipe for buttermilk waffles. Measurements are metric, so use at own risk!
Ingredients:
- 320 grams flour
- 2 tablespoons sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs, separated
- 1/2 liter (500ml) buttermilk
- 6 tablespoons butter (soft, I like to zap it in the microwave first)
Mixing:
I mix the dry ingredients first, then seperate the eggs—yolks in the mix, whites in a mixing bowl to get whipped stiff. Then I add all the remaining ingredients but the egg whites to the dry mix, and use the mixer (don't worry about lumps!). Finally, I "fold" the egg whites in (most often I just mix them in with a spoon, as the family is now crying "where's the waffles?"), and it's time to bake!
Baking:
Oh, come on, you ought to know how to use a waffle iron! Just be sure to use real maple syrup. If you're going to make waffles from scratch, why spoil them with artificial syrup?
