I am lucky enough to have a Mexican market across the street from work so often I buy ready made chorizo there. However I also make up my own. There are lots of recipes for this sausage but here are a couple I like...
Chorizo
1 lbs. ground pork or beef
5 tablespoons Mexican spices (cilantro, cumin, Mexican oregano, crushed red pepper, use your imagination)
3 tablespoons Spanish paprika
3 tablespoons red wine vinegar
Salt (optional)
3 - 6 minced garlic cloves
1 tsp sugar
Mix all of the ingredients together and refrigerate.
The sausage will develop a better flavor if the ingredients
are mixed together the day before cooking.
This sausage freezes well.
Homemade Chorizo
INGREDIENTS:
2 cloves garlic, mashed
1 teaspoon salt
1 tablespoon vinegar
1 tablespoon + 2 teaspoons chili powder
1 1/2 teaspoons salt
1 1/2 pounds ground pork
PREPARATION:
Mash garlic with salt; add remaining ingredients. Mix together and fry
until brown. Use in any recipe in place of chorizo.
