No, no, no. Calm down. Not that Fast Food. Fast as in a quick pinch-hit diary as our schedule has hit a glitch! If the regularly scheduled diary appears, I will delete.
What are you eating tonight? After nearly a week away from home and hectic days leading up to that week away, I've been so happy to be back home and cooking again. Here in North Florida, the gentle spring days very abruptly leapt into summer, so I've been in summer cooking mode. For me, that means a few things:
- Fresh. Not just seasonal produce (which rocks!) but minimal cooking time and bright, clean flavors. I've been on a lemon kick lately. As I type I'm sipping a raspberry lemonade with vodka, a great summer cocktail! But I digress... since coming home I've been craving dishes with fresh lemon and herbs. A quick, easy way to satisfy that craving is this wonderful pasta recipe. I "kick it up" several notches, adding sundried tomatoes, red bell pepper, and often mushrooms and chicken. Everyone I've served it to loves it, and it is so fresh and light and bright tasting.

Watermelon. Salad Caprese. Salade Nicoise. Cold white wine, peel 'n eat shrimp, oysters. Cool breezes. Frozen margaritas. Tank tops and bare feet and air-conditioned dive bars after a day at the beach.
