in recent weeks, I've developed an interest in eating a less inflammatory diet. I think I've shared here before that my sister has a very aggressive form of Rheumatoid Arthritis, and has been going through various medication regimens to attempt to slow the RA down. Even the biologics are having limited effect. So I decided to look at diet.
We all know that some foods are better for us than others, as a general case. Some foods affect specific people in negative ways. For instance, my husband is mildly allergic to corn and soy. He doesn't avoid them strictly, because his allergy is manifested as hay fever symptoms, but he does tend to avoid the more egregious offenders, such as corn oil, HFCS, and soy oil. Another example is celiac disease, which is gluten intolerance causing damage to the intestinal lining.
For arthritis sufferers, an anti-inflammatory diet holds some hope. And many think that a more anti-inflammatory diet may help to prevent some chronic diseases, as well.
In my Internet travels on the subject, I found a very interesting website: Nutrition Data. This website shows the usual nutrition information we are accustomed to seeing on food nutrition labels, but it also shows much more.
You can see the difference between, say, whole wheat flour and raw spinach leaves. Even something perceived as very healthy - whole wheat flour - can cause significant inflammation with a potentially negative impact.
The goal, of course, is to balance the inflammation-causing and the anti-inflammatory foods. I find it very interesting, and have begun to track my foods (you can even enter your own recipes), but have not achieved balance as of yet. At this point, I'm using it as a reference, to make better choices.
I'm still making bread, though.
