That's what I thought when I looked into the fridge, seeing leftover chicken I really didn't want to consume, a chopped salad that looked old and wilty, and eggs, proscuitto, brie, and one half of a red onion and a carrot. There wasn't anything else in the fridge aside from jams and salad dressings.
Then an idea came to me. Why not make a rice pilaf and top it with a fried egg?
So that's what I'm making for lunch right now. Necessity and hunger often forces creativity with food.
This rice pilaf, which is currently simmering on the stove, has salsa verde, two garlic cloves to permeate the rice with flavor, chopped onions, peas and carrots. When the rice's done, I'll be taking off the stove, adding some leftover proscuitto from last night's grilled cheese dinner, and topping it off with a fried egg.
I think it'll be delicious, but this is the first rice pilaf I've made with a fried egg. I hope it turns out alright.
