Happy glorious Easter to you all at Dailykos! Here in the slinkerwink household, it's been a very busy morning as my DH and I are getting ready for a massive Easter potluck. I've been up since 8:30 a.m. in the morning making an utter mess of the kitchen.
My poor dog, Bella, hid underneath the table while I was busy banging pots and pans together. This is usually where she hides while I'm busy making dinner. Sometimes she'll come over to the threshold of the kitchen, lie down, put her head on her paws, and look at me in the hopes of getting affection through her puppy dog look :-) It works every single time.
I'm giving you two quick puff pastry recipes that I made this morning.
Tomato Puff Bites
1 pint cherry tomatoes, halved
1 sheet puff pastry
1 cup pesto (I made my own walnut pesto)
Egg wash
1. Preheat oven to 400 degrees.
2. Slice the thawed puff pastry into vertical thirds, and then cut cross-wise to create 16 to 20 pieces.
3. Put a cherry tomato on each puff pastry piece. Brush with egg wash.
4. Put into oven for 20 minutes or so.
5. Add a dollop of pesto on top.
And this was the end result. I'll add the pesto when I get to the potluck dinner so it looks pretty.
And this is my favorite, which always is a crowd-pleaser:
Raspberry Brie Puff Bites
Brie
Raspberry jam
2 sheets Puff Pastry
Egg wash
1. Preheat oven to 350 degrees.
2. Slice thawed puff pastry sheets into even squares to fit a greased 24 mini-muffin pan.
3. Add a small piece of brie cheese into each puff pastry slice. Cover with a small dollop of raspberry jam.
4. Brush egg wash over the edges of the puff pastry.
5. Bake for about twenty to thirty minutes.
Here it is, fresh out of the oven just a couple of minutes ago. I'm letting it cool before I take it off to add to a second serving dish.
The last time I served these raspberry brie puff bites, it was at the New Year's Eve dinner. My family inhaled them in five minutes flat. The little cousins were disappointed not to get any more raspberry brie puff bites. Next year, I'll just have to triple the batch :-)
