There seems to be a hole in our calendar tonight, so you’re stuck with me. I didn’t have much time to write something more substantive, but I thought in lieu of a plain open thread, I’d share a quick recipe.
This is my latest obsession. I’m always looking for tasty and filling meatless dishes, and this “zucchini orzotto” (with orzo pasta, not pearl barley) hits the spot. It’s not risotto, but it is a creamy bowl of starch, so it’s partway there—with much less time and effort! You might even trick somebody into thinking you put some work into dinner. You could even trick yourself into thinking it’s unhealthier than it is. I adapted my recipe from this one, having made some adjustments. The ingredients I use:
6 oz uncooked orzo
2 Tbsp olive oil
2 large zucchinis, sliced very thinly (almost paper thin)
8 oz muchrooms, sliced
2 cups vegetable stock
1 Tbsp butter
1 oz parmesan cheese, freshly grated
Salt and black pepper to taste
Fresh herbs (parsley, basil, and/or chives) to taste
Super easy. Heat the olive oil over medium-high heat and add the zucchinis and mushrooms, along with a pinch of salt. Stir for about 10 minutes, or until the mushrooms are tender and the zucchini slices are nearly falling apart (the whole point is for the zucchini to lose its texture and meld into the pasta). Stir in the orzo and toast for a minute, and then add the vegetable stock. Bring to a simmer and cook, stirring occasionally, for about 15 minutes—or until it is a nice, creamy consistency. Taste for seasoning and stir in the butter, parmesan cheese, and any fresh herbs you want. Sometimes I also add peas, but not tonight. That’s what I call a tasty bowl of starch.
