This time next week, Casa Brillig will be in a Rochester NY hotel room in preparation for Wednesday’s K1 Moves Into Her College Dorm Experience. It’s an exciting time in which ALL four of us are looking at both in excitement and utter terror of what lies ahead. Before we leave her to navigate the College Freshman Path, we have one more week to indulge in all of her favorite homecooked foods! I hope you’re hungry, so grab a tray and check out the offerings at the various dining hall stations (college dining centers have improved dramatically since my days!) then follow me to our table below the Story Break, after a word from our sponsor…

K1 took seriously the offer of “what do you want to eat for dinner this week, you get to choose” and gave us a list of meals she’d like to have before she leaves. I present here the four top choices of an 18 year old incoming college freshman when told she can have whatever she wants:
- Homemade potstickers (chinese pork dumplings) with basmati rice. We’ve been making these potstickers for decades now, assembly line fashion so we can eat lots, then freeze them for later devouring. This was the first batch made post-diabetes diagnosis, so we made 100 traditional, plus two dozen potsticker filling meatballs poached in broth and served over riced cauliflower.
- Chicken and shrimp risotto. This has turned out to be one of her favorite comfort food meals. Creamy rice, bites of chicken and shrimp, with peas and parmesan mixed in. (I pull out the shrimp & chicken and eat it over… yep… cauliflower rice with lots of parmesan)
- Burrito bar. We prepare taco beef, refried beans (Trader Joes Refried Black Beans w/Jalapenos, not spicy at all), onions, tomatoes, lettuce, cheese, avocadoes and hot banana peppers. Add a mix of plain, spicy and low-carb tortillas and we all get what we want!
- Macaroni & Cheese with Chicken Nuggets. If you’re imagining Kraft/Annies and Processed Bits O’Poultry, think again. We make mac (or cauliflower) & cheese from scratch, and pair it with Morningstar Farms Vegetarian Chicken Nuggets. Family history trivia: K1 ate these nuggets until she was 8 not realizing they weren’t actually chicken. A friend staying for dinner spilled the beans, and this possibly was more upsetting to her than when she joined the Adult December Conspiracy.
- We’re also trying to fit in a trip to a favorite restaurant, but not sure if that will pan out. She also has to pack :-)
