At this time of year cooking with booze is just so much fun! So today is all over the place from a nice Irish creme to beer bread and mushrooms!
I have been enjoying Bailye’s for years but it has changed for the worse, so I make it to my own liking now. FREEDOM!
Scotia’s Irish Cream
1 2/3 cup Irish Whisky ( l use Tullamore Dew)
1 cup ½ & ½
14 oz sweetened condensed milk (I use an asian brand)
1 tsp instant coffee ( like Medaglia D’Oro instant expresso)
2 T chocolate syrup
1 tsp vanilla extract
1 tsp almond extract
Add it all together in a jar, shake it up and let it mellow in the fridge for about a week.
Beer Bread
I know I have put this out there before, but it is and oldie and a goodie.
Heat oven 350
3 cups self rising flour
1/3 cup sugar
12 oz beer
Mix and put into a greased loaf pan and bake for 1 hour
Marsala Mushrooms
A lovely recipe I learned from one of Johnny Carson’s mistresses. She was so nice. It is really easy but you have to be careful so the ‘shrooms don’t get too browned..
1 lb crimini mushrooms, ¼ — 3/8 slices
3 T olive oil
3 T salted butter
4 T Marsala
1 tsp dried thyme
Heat the olive oil and butter over medium heat, add mushrooms. Toss and cook until the liquid is absorbed. Add the Marsala and thyme and more butter if needed. Stir and cook gently until browned and the Marsala is reduced.
