Good evening, kibitzers. I have to apologize for not having much of a diary tonight. Today was the the last day of finals for my students (I am finally DONE with the semester!), and then right after that I had an appointment.
Then, right after my appointment, I went to Buc-ee’s (not a very short drive for me) to shop for some holiday food gifts to take back to family in Pennsylvania—I rave about Buc-ee’s so much that I thought I should bring a taste of it home with me. It’s a little challenging to find appropriate food gifts for my rather...bland...family, but I think I nailed it. I got a few trays of glazed pecans, cashews, and almonds (my favorite things at Buc-ee’s), some jars of apple butter and blackberry preserves, some salsa, and some jerky for my nephews. Now, to resist eating all of it before I fly home…
I got home just in time to put dinner together. Since I have nothing else, you can look at my dinner. I cooked a ribeye steak with roasted brussels sprouts, and I also whipped up some chimichurri sauce:
