Every year since 2010 I’ve done a series of December diaries focusing on a variety of seasonal topics ranging from music to food to ugly sweaters. (Full disclosure: I did ONE Seasonal diary in 2008, and 2009 (holy crap, how did TEN YEARS go by so fast!) was the first December K2 was with us so I was a little distracted :-)). It’s time to do it again! Don’t worry if Christmas isn’t your thing- while my personal December perspective is primarily secular but culturally Christian-based with a vibrant dose of earth-centered Winter Solstice mixed in because Unitarian Universalism, these diaries are NOT meant to be siege locations in the War On Christmas. In other words, if there’s a holiday in December that makes you happy, that you mark differently than all the other days, or that involves negotiating about who brings what food… or even if there isn’t... this is a place for you!

Several of my Seasonal diaries have revolved around food. One of my earliest, way back in 2013, was a cookie swap, and I shared one of my favorite holiday cookies that I used to make with my Mom, Russian Tea Cakes. The included nutritional information will make it obvious that modern-day Type II Diabetic Brillig can NOT eat these buttery nutty sweet bits of goodness any longer, as a mere 3 cookies puts me over my carbohydrate limit for the day. What’s a good low-carb eater to do?
Enter my favorite lowcarb ketogenic recipe creator and cookbook author, Carolyn Ketchum. She’s owner of the backbone of my lowcarb ketogenic recipe website collection, All Day I Dream About Food. And recently, I learned that she had a Keto Pecan Crescent Cookie recipe that people were raving about. So today, I set out to make a batch. Here’s how it went (TL;DR they’re easy and delicious because all of Carolyn’s recipes are!!):
At this point, there are so many options. I could have dusted them with powdered sweetener, or made a glaze with 1/3c powdered sweetener plus 3Tbs heavy cream and a little vanilla, or melted together 3oz stevia-sweetened dark chocolate plus 1/2oz cocoa butter and dipped the ends. Or, I could have done ALL of those things, as the title photo shows.
You’re all wondering, I am sure, how do they taste?? I’ll be brutally honest, there IS a difference between sugar and any zero-glycemic index sweetener. However, when the choice is cookie or no cookie… it’s a no brainer for me:
