Good evening, y’all, and thanks to ninkasi23 for inviting me to contribute here! I confess that my Wife and I don’t cook too many “sit down” meals, but this recipe caught my eye a few months back…

I love olives and dark meat chicken, so this one was right up my alley. I also wanted to try it while I still had a few fresh tomatoes. I basically followed the letter of the recipe, but added some grated parmesan cheese at the end. Prep time included, it only took about 1 hour/15 minutes.
Ready for the oven. There really are boneless, skinless chicken thighs under all that stuff...
With a side of pepper jack cheesy rice, some wheat toast and a glass of Yellow Tail shiraz...
I only drink wine (Shiraz or Merlot) with steak or something Italian, and this dish seemed to have a “Chicken Parm” vibe to it, hence the wine… My Wife really doesn’t care for red sauce, but she admitted that it was “pretty good”… I got the leftovers to myself!
