Today was pretty relaxing here at Casa Brillig. K2 had a soccer match, played under MA guidelines to try to maximize safety… masks on all the kids on field and off, only one spectator per player to keep numbers down, and a whole set of rules in the era of covid… such as no heading and no throw-ins. K2 also got a trip to the store because he seems to have grown out of all of his pants and hoodies, and it’s finally getting chilly enough that he noticed :). The rest of us got household stuff done, and were glad to call it a productive day.
We even held a first-ever Casa Brillig Varietal Cider Tasting, inspired by K1 finding a cider brand at the store who sold not just ‘apple cider’ but single apple varietal ciders. It was fun and yes, we could taste differences. We all had a different preference order, and no one guessed correctly that the middle row was Honeycrisp and the bottom was Gala! Everyone did, however, note that the top row lacked ‘uniqueness’ and suspected it was the multi-variety Generic Cider.
BUT… BUT… the best part of the day was making a loaf of bread with our freshly-received King Arthur Keto Wheat Flour. While keto purists may balk at the inclusion of wheat ingredients, I worry only about the net carbohydrates per serving, and this flour comes in at 4g carbs per 1/4c flour. Compare that to 23g for the same amount of regular all-purpose flour and you see why I was excited to try this despite the ridiculously high cost (Mr. Brillig reminds me that if it tastes good and helps me stay healthy, it is worth the occasional splurge). He used our bread machine and while the results need some tweaking (the machine overkneaded it and it didn’t rise as high as regular bread probably because we didn’t add sugar for the yeast to nibble) it was delicious!! This matters a great deal because in a few short weeks… STUFFING (or DRESSING, as we don’t stuff our turkey but potato, potahto :-)). Take a look for yourself:
