Good evening Y’all, and welcome to another Downheah Edition of WFD! October 16th would have been my parents’ 68th wedding anniversary, and one of my Dad’s favorite meals was salmon patties & peaches. I make it several times a year, but always around their anniversary…
I guess most folks call them “croquettes”, but it was always “salmon patties” around our house. On its face, the combination seems odd, but they really work well together. Dad always made his oven roasted “Italian potatoes” with this meal. The fruity tang of the peaches and the sweetness from the heavy syrup really compliments the salty, savory flavor of the salmon patties & potatoes.
I don’t really have a recipe for this dish, but besides the salmon, I always add sweet pickle relish, chopped onion, 1 egg and a bunch of crushed up saltine crackers. I usually “wing it” with whatever else that I have on hand. For this version, I also added some chopped Manzanilla olives, some pickled jalapenos, and a dash of brown mustard. I use my hands to mush all that stuff up and form it into patties; then they are fried in canola oil in a cast iron skillet...
As for the potatoes, I just cut up about 4 russets into half inch pieces, coat with canola oil, and sprinkle with salt, pepper and Italian seasoning. Covered in a cast iron skillet at 400 deg for about 30 minutes...then uncovered under a high broil to crisp them up.
Once on the plate, I drizzle both the salmon patties and potatoes with some of the syrup from the peaches.
We’ve always got a couple of cans of salmon & peaches on hand, so this meal is always on the menu! What about y’all? What’s For Dinner Tonight??
