Good evening Y’all, and welcome to another downheah edition of WFD. The Wife and I both had really bruising work weeks, so dinner has been leftovers or carryout lately. By Friday night, however, I was hungry for an actual cooked meal. After rummaging around in the freezer, I found some chicken thighs and thought that baked chicken, pinto beans, cornbread and oven roasted potatoes sounded really good. Then I saw the bag of frozen stir fry vegetables….
There’s really not much to this dish. The chicken was baked for about an hour in a cast iron skillet, then de-skinned and taken off the bone.
I sauteed three cloves of garlic, a small white onion, some coarse ground black pepper, red pepper flakes, and a couple of shots of soy sauce for a bit, then turned up the heat and dumped in the bag of frozen vegetables.
After about 10 minutes on high heat, I threw in the chicken and some of the pan drippings. Like I said, not much to it… Breast meat works fine, as well, but I’ve always been a “thigh guy”, and I can sometimes find the family packs of thighs for 39¢/lb...
I’m a bit under the weather today with some sort of sinus “crud”, but I’m trying to hang in for the BAMA/LSU game at 7pm. I hope you all are well and staying safe!
