I should have known when the brain hamsters woke me at 5am that it was going to be a very long day. And without going into details, it was. Not bad, mind you, but it was a busy day.
However, between all the tasks that involved other people, I had one item of my own on today’s to-do list… use the thawed homemade pumpkin puree in my refrigerator to make two loaves of pumpkin bread, Why two? Because as a Type II diabetic who eats keto to keep my blood sugar in check, I don’t eat sugar or wheat-flour items, but everyone else in the house does.
If this were a less busy day, I’d have pictures of ingredients and the process… but it was indeed a manic day. It took me close to five hours, not because the recipes are difficult or time-consuming, but because I was so scattered doing other things it took me all day to get all the steps completed. But the effort was well worth it, both because the entire house smelled delicious, and because these are the two best pumpkin bread loaves ever.
The traditional bread recipe is old enough it came from the rec.food.recipes usenet group and no longer exists on the internet, but will live forever on a printed page in my kitchen. I am sure if you’re a pumpkin break afficianado, you’ve got a recipe you like — if not, drop me a line and I’ll send you a photo of mine.
The keto loaf, however… this is a new recipe for me, as I haven’t really liked how my prior keto version worked. It’s found at gnom-gnom.com and and was WELL worth the time it took. If you need a low-carb bread that doesn’t taste it, and don’t mind having a couple of odd ingredients in it (flaxseed meal, psyllium, coconut flour, and zero glycemic index sweeteners) then please try this recipe. I added homemade sugarfree dried cranberries and they were yummy!
