Well, hi there!
Been a while, and there’s a storm complete with thunder closing in on my wee hamlet, so this is going to be short and sweet.
When I’m busy, I do everything I need to do in one day- and as it turns out, my one day off this past week was Monday. So yeah. Things that can hold…
I made sandwiches, rice, marinated and cooked soy sauce chicken, dry-fried asparagus, made some garlic spinach and mushrooms… there’s slaw and boiled potato… and I’ve pecked away at them all this past week. But today I get a treat— and one I didn’t have to cook myself!
Where I work, we’re on a cove on an island on the coast of Maine. There’s a wedding this weekend for a ton of happy, crazy people— happy to see their friends get hitched, and happy to be able to celebrate together (finally!) in a drop-dead gorgeous place- with some excellent food to boot! Last night was the rehearsal dinner- which was a lobster boil on the beach. Also paella and all those good beachy things with loads of freshly caught seafood everywhere. And who knew?
THERE WAS LEFTOVER LOBSTER!!!!!!!!!!!!
Who ever heard of such a thing??? So there it is.
Cold lobster with fresh garden greens and basil aioli. I’ll be in bed by 8:30, and feed everyone their post-celebration breakfast tomorrow- Huevos Aragostos! (poached eggs on warm buttered lobster on toasted baguette, sauteed fresh corn with queso fresco.
Gotta go before I lose power!
