This year we decided to do a small dinner for just the two of us and it worked out very well! My other half did most of the cooking and I just helped prep and clean. It was a nice roast chicken instead of turkey (5lbs so plenty still leftover!) and then the delicious sides: stuffing, mashed potatoes, brussels sprouts w/bacon, and homemade cranberry relish w/orange and ginger. Apple crumb tart for dessert.
I am planning on making a pot pie with the chicken as I happen to have a frozen pie crust that needs to be used. If I have enough chicken after that I am hoping to make a Mulligatawny soup because we have a bunch of Granny Smith apples and stock.

I also just saw a recipe for a roasted squash soup and cranberry relish was used as a garnish so now I am thinking that would be a use for the cranberry relish.
This video has 3 dishes to use leftover turkey and the filling he makes for a pot pie is pretty much what I will do with chicken, then I will par-bake my deep dish crust before filling and topping:
