I just found a new favorite recipe for Sunday brunch this morning, made it, yumm-yummed with my husband as we devoured it with buttered toast, and it's one that we'll keep on making for future Sunday brunches whenever we feel like it.

Baked Eggs with Leftover Ratatouille
Last night, I'd made ratatouille gratin to go with roasted chicken breasts for dinner. We still had plenty of ratatouille left over, so this morning I decided to use them for baked eggs with buttered toast. It was so simple and ridiculously easy, but with a lot of flavor packed into that ramekin.
Here's my baked egg ratatouille recipe:
2 eggs
Leftover ratatouille gratin
Salt
Pepper
Parsley
Parmesan cheese
4 slices toast, two slices cut out into circles
1. Put one cut-out toast circle into the bottom of each ramekin. Pour the ratatouille on top, making sure to add a bit of chopped parsley. Pour in an egg into each ramekin, making sure to keep the yolk whole. Add a smidgen of salt and cracked black pepper on top. Add about a teaspoon of grated parmesan cheese.
2. Put the filled ramekins onto a baking sheet, and into the preheated oven at 400 degrees for twelve to seventeen minutes or until the whites are set. Take out and serve with buttered toast to dip into the dish. Delicious!
If you don't have ratatouille on hand, you can put in canned diced tomatoes with some bacon, and green onions as the base of this dish. The base is pretty versatile so just let your imagination run wild!
